Matsutake mushroom:
Matsutake mushrooms are said to be the king of autumn flavors, but some say they have the impression that they are less nutritious than other mushrooms. We asked a registered dietitian about the nutritional value of matsutake mushrooms.
Matsutake is the king of autumn flavors. It is a high-quality, aromatic ingredient that can be enjoyed in a variety of ways, including charcoal-grilled, steamed in a clay pot, and takikomi rice. On the other hand, there seem to be some doubts about the nutrition of matsutake mushrooms, such as “I don’t know much about the nutrition of matsutake mushrooms,” “Are they really nutritious?” and “I have the impression that they are less nutritious than other mushrooms.” What actually happens? We asked Yurie Kishi, a registered dietitian, about the nutrition of matsutake mushrooms.
Fragrance ingredients also have cancer prevention effects:
Q. First of all, what kind of food is “matsutake”?
Kishi: “Matsutake mushrooms are said to be the representative taste of autumn, and are a type of mushroom that grows naturally in forests of red pine and black pine, which are at their peak from September to October. Furthermore, the detailed environmental conditions for growth are not yet clearly understood, making it difficult to cultivate artificially and difficult to reproduce in nature, making it a very valuable mushroom.
Because red pine forests are decreasing year by year, prices tend to be particularly high in years with low harvests. In Japan, Nagano prefecture produces the most, and overseas, Korea and China are the main production areas.
The most appealing thing about matsutake mushrooms is their aroma. Matsutake mushrooms have a unique aroma because they contain a fragrant ingredient called “matsutake all”. It has a pleasant crunchy texture similar to eringi mushrooms. Please note that you cannot eat it raw.”
Q. Some people say that “matsutake mushrooms have an image of being less nutritious than other mushrooms.” Do matsutake mushrooms contain any nutrients?
Mr. Kishi: “Matsutake mushrooms do not contain any unique nutrients among mushrooms, but like other mushrooms, they contain a lot of vitamin D, vitamin B group, potassium, dietary fiber, etc.32 out of 100 grams. It is a low-calorie food with only 12 kilocalories per bar (40 grams of edible portion).
Additionally, as mentioned earlier, matsutake mushrooms are rich in aromatic components such as “matsutakeol” and “methyl cinnamic acid,” which create a unique aroma. These ingredients not only increase appetite and stimulate the secretion of digestive enzymes, but are also expected to have cancer prevention effects.
Q.What are the recommended ways to eat matsutake mushrooms and what precautions should I take?
Kishi: “Freshness is important when it comes to matsutake mushrooms, so eat them as soon as you get them before they lose their aroma and flavor. When cooking, splitting them by hand rather than cutting them with a knife will bring out the aroma.
Conclusion:
Mushrooms are usually not washed to preserve flavor and especially water-soluble nutrients, but wild matsutake mushrooms often have more dirt and debris on them than their artificially grown counterparts. If you are worried about it, wipe it with a damp cloth or wash it gently in a bowl of water instead of running water.
Matsutake mushrooms, like other mushrooms, contain a lot of vitamin D, which helps promote calcium absorption. Calcium is an important nutrient for bone health, but its absorption rate is very low. This is not limited to matsutake mushrooms, but modern Japanese people tend to be deficient in both nutrients, so it is important to try to consume both calcium and vitamin D on a daily basis.
